I Scream (by En)

Much like the ideal gas law, wherein pressure, P, is inversely proportional to volume, V, when temperature is constant, so to has my posting, P, been inversely proportional to the volume, V, of what has been produced in my kitchen, irrespective of days of constant, boiling temperatures this summer. (Oh how the not-so-inner nerd delights in putting all those thermodynamic equations of yonder to good use!) I went on an ice cream  making bender this summer and this one was of my favorites. Adapted from Salt and Straw's honey balsamic with black pepper creation, I swapped the honey balsamic for fig and played with the proportions of milk and cream, and with the amount of xanthan gum, for a richer mouth feel than the original. This photo is of the 3rd and most satisfying iteration proving that, relative to one's resilience in the face of failed experimentation, persistence is directly proportional to delicious results.
